Best Part of the Pea
Peas come in many shapes. You can find them in different colors and sizes. If the peas are young and tender, you can snap them and eat them pod and all. Sometimes, like with snow peas, you can eat the flat pods and tiny stems right along with the little peas inside. You might not even notice the peas because they are so small, and the taste of the pod fills your senses.
The purple hull pea and the black eye pea are strong yet tender and seem to get better each time they are reheated. Their little white cousin is so delicate that it begs you to stir it gently. I didn't discover that little pea until a few years ago when I owned a cattle ranch. I thought it was better than eating candy when I tasted it. I have never seen it sold fresh in stores.
But Ping is the one who introduced me to the best part of the pea. The leaves. Especially snow pea leaves. Cook them and eat them vine, stems and all. They are available only in season, and when they are prepared well, it is tempting to just keep eating them. I ordered some last evening when Cici and I went to eat in Chinatown. Some day I will have to check their nutritional value. Can something that delicious be good for your health?
